Delivered on-site to Highfield syllabus
Courses are delivered on-site at your premises to the Highfield syllabus. Up to 12 delegates per session. Content, exercises and scenarios are drawn from your industry so delegates apply what they learn directly to their work.

Successful delegates receive a Highfield-accredited certificate at the chosen level. Opus can log the certificate into your training matrix so the record sits alongside wider food safety documentation.

What to expect from this course
What's covered
Level 1 (half day): food safety basics for low-risk roles. Level 2 (1 day): food handlers - hazards, personal hygiene, temperature control, cleaning. Level 3 (3 days): supervisors - managing hazards, the supervisor role, food safety management systems. Level 4 (5 days, catering): managers - compliance, operational requirements, implementing and maintaining food safety management.

Who it's for
Food handlers, supervisors and managers across catering, manufacturing and retail. Level 1 suits low-risk roles like stock and store room staff. Level 2 suits food handlers. Level 3 suits supervisors. Level 4 is for managers in catering.

Prerequisites
None for Level 1 or 2. Level 3 and Level 4 benefit from delegates already holding or working at the level below, though not strictly required by Highfield.

Yes. Courses are delivered on-site at your premises. Group size up to 12 delegates per session, with industry-specific examples throughout.
How long is each course?
Level 1 is half a day. Level 2 is one day. Level 2 Refresher for manufacturing is half a day. Level 3 is three days. Level 4 (catering) is five days.
Is refresher training required?
Highfield sets refresher guidance per qualification. A Level 2 Refresher for manufacturing is listed explicitly (half day). For other levels, refresher cadence is confirmed with your Opus consultant and Highfield guidance.
What certification do delegates receive?
A Highfield-accredited certificate at the chosen level on successful completion of the course assessment.
What's the difference between the catering, manufacturing and retail variants?
Each variant follows the Highfield syllabus for that industry, with examples and content tailored to that environment. Choose the variant that matches your workplace.
Which level do my staff need?
Level 1 is for low-risk roles like stock or store room staff. Level 2 is for food handlers working in catering, manufacturing or retail. Level 3 is for supervisors and future supervisors. Level 4 is for managers and future managers in catering.
